Stir Fry Turkey with Chilli and Ginger

Ingredients

1 red onion chopped finely

2 garlic cloves crushed

1 hunk ginger chopped finely

1 tablespoon of toasted sesame oil

2-3 tablespoons of soy sauce

1 tablespoon of chilli in olive oil or Harissa paste (medium to spicy)

600g Turkey minced

2 heads of bok choy washed and leaf & base chopped into pieces

Handful of mange tout, washed, top and tailed and chopped into pieces

2 handfuls of frozen peas

Method

Saute onion in toasted sesame oil for 5 minutes on a low to medium heat. Add garlic and ginger. Stir well and and bring heat up to medium to high before adding in turkey mince. Keep stirring until turkey is cooked. Add soy sauce and chilli in oil/harissa. Stir well. Add bok choy and manage tout and cook for a further 3-5 minutes. Add frozen peas and stir well. Peas should be cooked through in 2-3 minutes. 

Lighter Meal - Serve in lettuce leaves (Romaine or Cos are best) or with a salad 

Meal for more active people in the house - Serve on wholegrain rice, quinoa, wholegrain cous cous or pasta
