Egg Fried Rice

A great recipe when there’s little fresh food in the house or you’re just not in the mood to take on a lengthy recipe.  It’s a no-fuss meal, made with four key ingredients: rice, eggs, vegetables, and soy sauce. 

Simple Egg Fried Rice

Ingredients

Cooked/leftovers wholegrain rice

3 eggs beaten

Knob of butter

Carrots, peeled and chopped into small pieces

Frozen peas

Scallions

Onion chopped finely

Toasted sesame oil or rapeseed oil

Soy sauce

Method

Cook the beaten egg on a pan in a little butter until lightly scrambled and then tip into a bowl. Wipe off the pan with a kitchen towel. Drizzle the oil in the pan over medium heat. Add the onions and cook them for about 2 minutes, stirring constantly. Turn up the heat to medium-high and add the mixed vegetables and white parts of the scallions and cook for another minute.  Add the cooked rice into the pan and cook for a few minutes, until the rice is heated through. If you have large clumps of rice, break them apart with the back of your spatula. Add the soy sauce, sesame oil and stir. Add the scrambled eggs and stir to mix again. Garnish with remaining sliced scallions. Serve immediately.
