Savoury Oat Cakes

Perfect savoury biscuit to enjoy as a healthy snack. These home made oat cakes are quick to make and freeze really well. So much healthier than the cracker you might pick up in the supermarket. Oats are a nutritious slow energy releasing carbohydrate that will keep you fuller longer. Perfect for a lunchbox filler.

I got this recipe from Saturday’s Irish Times and it also inspired by savoury muffins


Ingredients

250g rolled oats
50g self raising flour
1/4 teaspoon salt
1/4 teaspoon sugar
100g cold diced buttter
75mls milk

Method

Place all of the dry ingredients and butter into a mixed and combine ingredients. Add buttermilk and mix with paddle attachment on a low speed until mixture forms a dough. form into a ball and cover in cling film and place in a fridge for 10 minutes. Flour a surface and roll the dough into 0.5cms thickness. using a round cutter, cut into rounds. Place on a baking tray and bake at 180 for 15-18 minutes.
