Cheese and Salami Muffins

A tasty, filling savoury muffin perfect to grab and during one of those busy days!


200g self raising flour
50g wholemeal flour
100g oats
1 teaspoon baking powder
2 eggs
1/4 teaspoon salt
100g butter
250mls buttermilk
150g grated mature cheddar cheese
5-6 slices salami cut into small pieces


Mix dry ingredients and rub butter in to create a breadcrumbs consistency. Add beaten eggs and milk and mix well. Fold in cheese and salami and mix well. Divide the mixture between paper cases in a muffin tray and sprinkle a little grated cheese on top of each. Bake at 190 for 20 minutes until golden brown.
