Dark Chocolate Cashew Nut Bars

I consider myself a healthy eater and really enjoy preparing and eating nutritious meals and snacks for my family and I. Thereโ€™s no doubt I feel the benefits of eating clean with a great sense of high energy and mood most days and rarely experience lows blood sugar, which helps get me through demanding days (and workouts!).

As meals and snacks go I eat clean and healthy everyday, however I have two weakness (that in moderation are fine but sometimes they creep in a little too much) Chocolate and red wine and I want to share with you a great healthy natural treat that might help anyone else out there with my love for a bit of chocolate. Hereโ€™s a recipe that should help you make the switch to a really healthy snack bar.

I got this recipe a long time ago from Domini Kemp's pages in the Irish Times magazine and have been making them regularly since .. oh yes the perfect healthy substitute! They also make a great lunchbox filler, post workout bar and snack for any endurance sport.

Dark Chocolate Cashew Nut Bars

  • 300g raw cashews

  • 300g pitted Medjool dates

  • 150g almond butter

  • 4 tablespoons of maple syrup (I only used 2 tablespoons)

  • 50g coconut flour

  • 50g desiccated coconut

  • Topping

  • 150g 85% good quality dark chocolate

Make the base of the bars by blitzing all ingredient together. Press into a baking tray lined with baking paper and place in the fridge to cool. When the base is set, pour the melted chocolate on top and chill until set. Makes about 20-25 bars.
