Paleo Chicken Tenders (Low Carb Healthy Alternative)

For all of you cutting down on bread for the new year, here is a simple recipe that all the family will enjoy. My healthy alternative to Chicken Tenders. Instead of deep frying chicken in breadcrumbs, these healthy boys are coated in ground almonds and oven baked, making them bread (and gluten) free and high in protein to keep you fuller longer! The almonds create a crispy crust around the chicken which stays moist inside. These tenders make a great main meal with 1/2 plate of vegetables or a perfect lunchbox filler or protein snack.

You need chicken (or turkey) breasts sliced into tenders, a large bowl with 1-2 beaten eggs, another large bowl with enough ground almonds to cover the chicken, freshly ground salt and pepper (and if you like a little kick add a teaspoon of curry powder to the ground almonds).

Simply dip the chicken tenders into the beaten egg and then cover with ground almonds, season well and place on baking paper on a baking tray. I drizzle with a little olive oil and bake at 190 for about 20 minutes.
