Apple Cheddar and Thyme Scones

These are a great savoury scone to add to lunchboxes or as a side to a bowl of warm soup

Ingredients

235g self raising flour

1tsp baking powder

25g butter cubed

150g mature cheddar cheese

1 tsp chopped thyme

1 large eating apple chopped and grated

2 eggs

115 mls milk

Makes approx 8 scones

Method

Preheat oven to 200 degrees or 180 degrees if using a fan oven. Line a baking tray with baking paper. In a large bowl sieve the flour and baking powder. Add the butter and rub with fingers until it resembles breadcrumbs. Add grated cheese, chopped apple and thyme. Mix well. Crack one egg in to a bowl and whisk together with 100mls of milk. mix until the dough comes together. Dust your work surface with some flour and roll out dough to a circle and cut out scones and place on a baking tray. Whisk remaining egg with a little milk and brush top of scones. Bake for 20 minutes until the top of the scones are golden brown.
