Crunchy Slaw the perfect addition to your healthy plants and protein plate!
One of my favourite additions to a grilled/barbecued/roasted piece of fish or meat is a tasty, crunchy slaw. It is also a great way of keeping your plate healthy by increasing the volume of plants in a delicious & nutritious way.
There are lots of different dressings you can add to crunchy, shredded vegetables and I posted my Sriracha dressing recently which is a definite favourite but today I made a creamy lemon yogurt dressing which also had me wanting more and more!
Some vegetable ideas to shred for your slaw:
Carrots
White cabbage
Red cabbage
Celeriac
Scallions
Some tasty additions to your vegetables:
toasted mixed raw seeds and nuts
parsley
coriander
CREAMY LEMON YOGURT SALAD DRESSING
170g plain yogurt , preferably Greek
60mls extra virgin olive oil
2 1/2 tbsp lemon juice
1 tsp garlic , minced
1/4 tsp black pepper
1/2 tsp salt
