Alva's Energy Balls

That perfect nutritious energy snack when you hit that afternoon low and need a quick pick me up. Great for lunchboxes too or a top up before heading out training.

My all natural vegan energy balls donโ€™t need any baking, just throw the ingredients together and refrigerate (they freeze great to if you are preparing a batch for the week ahead)


Alvaโ€™s Energy Balls

Ingredients

170g oats
2 tablespoons of flaxseeds in 6 tablespoons of warm water
125g almond butter
2 tablespoons of maple syrup
8 dates (without stone)
4 tablespoons of coconut oil
1 teaspoon of vanilla extract
1/2 teaspoon of cinnamon
1/2 teaspoon of sea salt
20g chopped walnuts
40g desiccated coconut


Method

First toast the oats over low heat under the grill until just browned around the edges. You dont need long (1-2 minutes) so keep an eye on them.

Combine the flaxseed and warm water and leave to thicken for about 5 minutes.

In a food processor, combine the almond butter, maple syrup, dates, coconut oil, vanilla, cinnamon and salt. Add the flaxseed mixture and blend until smooth. Add the walnuts and pulse until combined. Add the oats and coconut and pulse until combined. Then roll the mixture into 20 balls and chill until firm (If the dough is too sticky to work with, chill it for several minutes before rolling).

The energy balls store for a few days in an air-tight container in the refrigerator or can be frozen for a later date!
