An immunity boosting mushroom soup!
It’s that miserable time of year when many of us are getting hit hard with flus and viruses. Perfect time to start preparing some warm, nutritious pots of soup.
Soups really can’t be easier to prepare…start with a knob of butter, sauté an onion and from there its add whatever you wish in terms of vegetables available to you! … top up with stock and cook until food is tender. The perfect way to get lots of healthful vegetables into the diet. Today’s recipe is for a simple mushroom soup - a five ingredient soup, most of which you have in the fridge/press .. just need to pick up a box of mushrooms!
Health Benefits of Mushrooms
All types of edible mushrooms contain different amounts of protein and fibre. They also contain B vitamins as well as a powerful antioxidant called selenium, a very important mineral which helps to support the immune system and prevent damage to cells and tissues. White button mushrooms are also one of the few non animal sources of vitamin D, a key vitamin that many of us in Ireland are deficient of during the winter due to the lack of the correct wavelength of sunlight reaching us.
Mushroom Soup Recipe
Ingredients
Knob of butter
1 onion peeled and sliced
Punnet of mushrooms washed and sliced in two
one vegetable or chicken stock gel make up with warm water
100ml milk or 50mls cream (optional)
freshly ground pepper to taste
Method
Sauté onion for 5 minutes in butter. Add mushrooms and stir on a medium to low heat for another 3-4 minutes. Add stock and cook on a gentle heat for 15 minutes. add milk or cream and season with freshly ground pepper. Blend and serve.
