Simple Seafood Chowder
SIMPLE SEAFOOD CHOWDER
This quick and tasty seafood chowder is full of natural ingredients. I don’t want to hear anyone say I won’t cook that because there is butter and cream in it! There is nothing unhealthy about either natural nutritious ingredient as long as it is in moderation and this recipe creates a bowl of wholesome goodness. No bread, rice or carbs needed it is so satisfying … packed with protein, fats and great carbohydrates.
Ingredients
Serves 5
1 tablespoon butter
3 large potatoes
3 large carrots
Couple of handfuls of frozen peas
1 onion
600mls fish stock
Splash of white wine (optional)
700g seafood mix
100mls cream
100ml milk
4 tbsp finely diced chives
Parsley to garnish
Freshly ground pepper and salt to taste
METHOD
Peel and dice the potatoes into small cubes. Peel and dice the carrot into pieces. Boil the kettle and make up the stock (if using a gel). Heat up the butter in a saucepan. Pop in the onion, carrot, potato. Stir continuously for about 5 mins. Pour over the stock, splash of wine and bring to a simmer, pop on the lid and cook for 15mins. Remove the lid, add in the fish, cream and milk. Allow to SIMMER for 5 /8 mins until the fish is cooked. Add the handfuls of peas and simmer for another 2 minutes before serving with a little parsley and chopped chives
