Falafel Burgers

 

Ingredients 

400g can chickpeas (rinsed and drained) 
1 small red onion
1 garlic clove
A handful of parsley 
1 tsp ground cumin
1 tsp ground coriander
1⁄2 tsp of chili powder (optional)
2 Tbsp flour
2 Tbsp rapeseed oil
squeeze of lemon juice

Method 

Drain chickpeas and place them into a blender with red onion, garlic, parsley, cumin, coriander, chili powder, flour and a pinch of salt. Blitz until fairly smooth. Add a squeeze of lemon juice and taste. You want the mixture to shape into four burger sized portions so if too sticky add a little flour. Place in the fridge for about 30-45minutes. Heat 2 Tbsp of oil in non-stick fry pan. Fry the falafel until golden brown on each side. 

Lovely served in wholemeal pitta breads with salsa, lettuce and crunchy raw vegetables or fermented vegetables
