Wholegrain Basmati Pilaf Rice

yum yum yum ….. I just love this pilaf rice recipe. It is a super tasty baked rice recipe that is really flavoursome and goes so well as a side to your main meal or just perfectly on its own with a few toasted seeds/nuts and a handful of greens.

Wholegrain Basmati Pilaf Rice



Ingredients

1tsp rapeseed oil
1tbsp butter
1 onion finely chopped
1tbsp garam masal
3 bay leaves
3 strips orange peel1 tin of Puy lentils rinsed well
250g wholegrain basmati rice
Small handful of raisins if desired (I prefer it without them but my son loves them in the rice)
700ml chicken stock
Salt and pepper

Method

Set the oven to 180 degrees. Put the oil and butter into a pan and add the onion and cook on a medium heat for 5 minutes until onion softens. Add the garam masala and cook for another 2 minutes, then add the lentils, rice, raisins (if desired), bay leaves and orange peel. Mix well and add stock. Season and bring to as simmer. Cover the pan and place in the oven for 30 minutes. Stir and serve. Add some fresh parsley if desired and stir through.
