Bacon, Cheese and Chives Scones

Here’s a quick home made scone that feels like a meal! Super filling scone and perfect for busy people on the go. Ideal as a quick breakfast choice that will keep you fuller longer with great protein and fats or as an addition to a lunchtime salad or soup. If you train or play sports, grab one or two of these between sessions!

Ingredients

100g Butter

2-3 rashers 

275g self-raising/wholemeal flour mix (I am going to try oats/wholemeal flour mix in this recipe next time)

½ teaspoon of baking powder

150mls milk

50 ml olive oil

1 egg

Handful of snipped chives (optional)

150g grated cheese


Method

1.    Heat oven to 200C/180C fan and grease a 12-hole muffin tin. Grill the bacon. Let it cool, then chop into small pieces and set aside

2.    In a bowl, combine the flour, baking powder and 1 tsp sea salt. Using your fingers, mix the butter into the flour mixture until it resembles breadcrumbs

3.    In a small bowl, whisk together the milk, oil and egg. Tip into the dry mixture, and gently mix until the flour mixture is mostly moistened (lumps will remain). Stir in the bacon, chives and cheese, then spoon the batter into the muffin tin.

4.    Put the muffin tin in the oven and bake for 15-20 mins or until the tops are golden brown.
