Vegetarian Indian Rice Casserole
Tired when you get home in the evening …. and last thing you want to do is prepare a family meal?
My advice is find a few quick, easy and healthy recipes every few months and roll them out. None of us have more than 20 minutes to prepare and cook a family meal so here’s a tasty vegetarian meal I prepared in less than 20 this evening
Vegetarian Indian Rice Casserole
Ingredients
2 cups rice
1 teaspoon turmeric
2 teaspoons of medium curry powder
1 tablespoon of butter
2 heads of bok choy washed and chopped into large pieces (all of the leaves)
2 carrots washed, peeled and sliced
3 cloves of garlic crushed/sliced
1/2 yellow pepper
soy sauce to taste
Quick Method
Warm 1 teaspoon turmeric and 2 teaspoons of medium curry powder in 1 tablespoon of butter added 2 cups of rice and cook rice as per pack.
Sauté 3 fresh garlic cloves (chopped), 2 bok choy chopped, 2 carrots sliced and 1/2 yellow pepper in butter.
Add the cooked rice to vegetables and then added a little soy sauce
Add s a few toasted cashew nuts on top
Big hit in our house!
