Hummus with a twist

Classic Recipe

Ingredients:

  • 1 can (15 oz) chickpeas (or 1.5 cups cooked)

  • 3 tablespoons tahini

  • 2 tablespoons olive oil (plus more for serving)

  • 2 tablespoons fresh lemon juice

  • 1 clove garlic (or more if you like it garlicky!)

  • 1/2 teaspoon ground cumin

  • 1/4 teaspoon salt (adjust to taste)

  • 2-3 tablespoons water (for thinning)

  • Optional: a pinch of paprika or sumac for garnish

Instructions:

  1. Drain and rinse the chickpeas. For extra smooth hummus, peel the skins off (optional but worth it!).

  2. In a food processor, combine the tahini and lemon juice. Blend for about 1 minute to create a creamy base.

  3. Add olive oil, garlic, cumin, and salt. Blend until smooth.

  4. Add the chickpeas gradually, blending continuously. Add water, one tablespoon at a time, until you reach your desired consistency.

  5. Taste and adjust seasoning (more salt, lemon, or cumin as needed).

  6. Serve with a drizzle of olive oil and garnish with paprika or sumac.
