Beef Bean Chilli
Ingredients
2 tbsp oil
1 large onion, finely chopped
2 large garlic cloves, finely chopped
3 carrots, finely chopped
2 red peppers, finely chopped
2-3 tsp medium chilli powder
2 tsp smoked paprika
2 tsp ground cumin
Good pinch of cinnamon
500g minced beef
2 x 400g tins chopped tomatoes
1 tbsp Worcestershire sauce
1 x 400g tin kidney beans drained and rinsed
1 x 400g tin chickpeas drained and rinsed
Method
Place a large pot on a medium heat and add the oil. Add the onion, garlic and all the vegetables and then stir in the chilli powder, paprika, cumin and cinnamon. Fry for 8-10 minutes, stirring now and then, until the vegetables are tender.
Add the meat and fry on a medium heat, stirring regularly for about 5 minutes until browned. Pour in the chopped tomatoes and 250ml water. Add the Worcestershire sauce. Simmer for about 45 minutes, stirring every 5 minutes. Add the kidney beans and chickpeas and simmer for another 15 minutes.
Serve in a large bowl with lots of raw vegetables, guacamole, salsa, sour cream, grated cheese… or whatever takes your fancy!
