Peanut Butter Oat Bars
I have a weakness for a great homemade oat bar. I don't like them sweet but prefer a satisfying bar with plenty of chew. We all know the traditional flap jack is loaded with sugar and butter and for those of you looking for a healthy snack bar, here is a great recipe I tried yesterday and it worked out very well.... (so much so I had to freeze them as the hand was returning to the container of bars a little too often yesterday evening!).
The bars are moist and filling as they are packed with eggs, oats, coconut and nut butter.
Ingredients
300grams oats
200grams of peanut butter (100% peanuts)
150 grams wholewheat flour
150grams desiccated coconut
3 eggs
3 tablespoons honey
Enough milk to make into a wet dough that can be made into balls
Makes 15-20 balls
Approx. 10 grams of protein per ball
Method
Preheat oven to 175 degrees Celsius. Mix all ingredients together with hands.
Drop a good tablespoon of dough onto a baking tray (or shape into a ball with hands) lined with parchment paper. Bake for 12-15 minutes or until pale golden brown at edges.
