Cheese and Sunflower Seed Scones
Looking for a tasty savoury scone recipe? This is a great home made substitute for a processed store bought bread and makes a perfect snack on the go or lunchbox filler.
Ingredients
300g self raising flour
200g wholegrain flour
1 teaspoon of baking powder
100g butter
1 teaspoon of Dijon mustard
100g of created cheese (I used half cheddar and half parmesan)
1-2 tablespoons of sunflower seeds - milled or whole
2 eggs
Enough buttermilk to bring to a dough
Method
Preheat oven to 200 degrees Celsius
Rub chilled butter into flour and baking powder mixture until resembles breadcrumbs. Add grated cheese and seeds and mix well. Add mustard, beaten eggs, mix well. Then add enough buttermilk to bring it to a large ball of dough. On a floured board, kneed the dough for a minute or two and then flatter the dough to about an inch depth. With a circular cutter, out out scones. Brush with a little buttermilk and sprinkle a few sunflower seeds on top. Bake for 12-15 minutes until golden brown and well risen.
