Protein Packed Bean, Quinoa & Spinach Soup

This is a tasty soup packed full of protein so no bread needed! It is also a great recipe if the fridge is pretty bare as most ingredients are pantry supplies!

This recipe makes about 6-8 bowls. 


Ingredients

1 tablespoon of olive oil
1 onion chopped
2 garlic cloves crushed
1 tin of tomatoes
1 tin of cannellini beans rinsed well
100g quinoa
2 bay leaves
2 litres of vegetable stock
3 handfuls of green beans, washed chopped into small pieces
salt and pepper freshly grounded. 
2 big handfuls of spinach, washed well

 


Method


In a large pot, heat the oil and add onion and garlic. Cook on a medium heat for 5 mintues, stirring.  Add the all the ingredients except the spinach and stir well. Season with salt and pepper. Cover the pot and simmer on a very low heat for 20 minutes. Add spinach and simmer for another 10 minutes. Serve.
