What to do with all those autumn apples.. Almond and Apple Cake
I am sure there are many of you with apple trees loaded with apples ready for picking. I am not a big fan of peeling apples, but on a day like today with the sun shining, I was only looking for an excuse to get out in the garden and I picked & peeled two big bags of apples! I now have two big pots of stewed apples bubbling on the stove and freshly baked apple cakes just out of the oven. Almond and Apple Cake Makes 2 cakes - serves 10
Stewed apples 8oz butter 4oz sugar 4oz self raising flour 4oz ground almonds 1 teaspoon of baking powder 3 eggs
Prepare the stewed apples (I added cloves, nutmeg, sugar and a little cinnamon). Beat the butter and sugar together, then add the dry ingredients and eggs at intervals beating all the time. Grease two circular baking tins and add about half the mixture between the bases of each. Place a ladle or two of the apple mixture on top of the cake mixture and then top with a few spoon of cakes mixture in different places on the apples. Bake at 180 for approx. 20-25 minutes. As there is not much cake mixture in the tins (mainly apples) it doesn't take very long to cook through. Serve warm.
