Sweet Potato Soup
June Bank Holiday weekend and the weather is so cold and miserable, I feel like a bowl of hot, satisfying soup. What better soup to warm you up and at the same time tick the "comforting, satisfying, healthy and delicious" box than a sweet potato soup with a warm kick from fresh ginger and indian spices. I made this soup for lunch today and it only took about 20 minutes from start to finish. So if you have a sweet potato sitting in the kitchen give it a go..well worth the 20 minutes work!
Sweet Potato Soup
1 tablespoon of coconut oil
1 large onion chopped
1 large sweet potato, peeled and chopped into chunks
1 inch piece of fresh ginger, peeled and chopped
2 sticks of celery cut into pieces
1 teaspoon of curry powder
Enough vegetable/chicken stock to cover vegetables
Freshly ground pepper
Melt coconut oil in a large pot. Add onion and sauté for 3-4 minutes. Add sweet potato, ginger and celery and cook for another 3 minutes stirring. Add curry powder and stir well. Pour in enough stock to cover the vegetables. Cook for 15 minutes until the vegetables are soft enough to blend. Season well with freshly ground pepper and blend to a smooth consistency.
