Soup: Tasty & Nutritious and Can Help with Weight Management! Tomato, Chilli and Red Pepper Soup
During the winter months it is routine for me to make up (a 10-minute prep) a pot of soup at least twice a week. In fact, it is unusual not to find a pot of some kind of soup on my stove. I think it is the perfect, nutritious and tasty way to fill (and warm) yourself up on a cold winter afternoon (or evening). Home made soup is also a great meal if you are watching your weight as I always find it amazing how full you feel after a bowl. Home made soup is also a very handy snack to have if you come in from work starving ...and feel too hungry to cook a proper meal. A cup of soup will take the edge off (anytime of the day!), leave you calm and ready to prepare a proper healthy meal. Not having a healthy, light snack available at these times, means you are more likely to reach for a poor food choice option for dinner.. eat too fast .. and then overeat! A cup of nutritious home made soup gets blood sugar back up to stable with little calories involved! Note I stress "home made" soup - unfortunately most of the soups (even the "healthy" brands) contain between 4-10 teaspoons of sugar per carton so stay well away!

Today I made a super simple tomato, red pepper and chilli soup
- 1 onion, chopped into 6 chunks
- 1 knob of butter 1/2 chilli (leave this out if some family members don't like spicy food)
- 2 garlic cloves roughly chopped
- 1 tin of tomatoes
- 1 red pepper roughly chopped enough chicken stock to cover vegetables
Sauté the onion, garlic, peppers and chilli in butter for 2-3 minutes. Add tomatoes and enough chicken stock to cover vegetables. Cook for 25 minutes on a simmer. Blend and serve.
