Simple Winter Vegetable Soup


Winter vegetable soup


  • Knob of butter
  • 2 large organic carrots, washed and peeled
  • 1 organic leek, washed and chopped
  • 3 sticks of celery, washed and chopped
  • 3 small organic potatoes, peeled and chopped into hunks
  • 10 leaves of fresh basil
  • Freshly ground pepper
  • ½ teaspoon of smoked paprika
  • ½ teaspoon of crushed garlic
  • 1 chicken stock gel
  • Enough water to cover vegetables



Sauté all vegetables in a knob of butter on a medium to low heat for 5-7 minutes. Add spices and stir well for 2-3 minutes. Add freshly ground pepper and basil leaves as well as stock gel and enough water to cover the vegetables. Simmer for 20-25 minutes until vegetables are cooked. Blend with a hand blender.
