I made these very tasty quesadillas as an evening meal last week and they went down really well. A healthy, simple meal without meat. Good quality flat bread or wraps (nice recipe from The Irish Times here however I bought the wholegrain "East West" brand which worked great) Grated cheddar cheese A big bag of kale (washed and chopped without vains) 1 large onion chopped finely 1/2 teaspoon of ground cumin 2 cloves of garlic crushed and chopped finely knob of butter 2 handfuls of parsley
Sauté the onion and garlic for 3-4 minutes in butter. Then add kale and leave on a low heat for 3-5 minutes stirring often. Remove from pan and set aside. Sprinkle some cheese on each wrap and then cover with kale mixture and add some chopped parsley. Fold over wrap, drizzle with olive oil and place on pan. Leave to cook for 2 minutes on a low-medium heat before turning over for another 2 minutes. Remove from pan, cut into quarters and serve warm with a salad.
