Simple Pancakes....that can't go wrong!

Making pancakes can be tricky business ... the recipe is easy but sometimes getting them to cook perfectly without burning or sticking to the pan can be more difficult that it seems! Here is my super easy recipe that can be used for sweet or savoury pancakes and a few tips on cooking them to perfection

Ingredients

100grams of a mixture of plain and wholegrain flour 2 eggs 300 mls of milk (or my favourite buttermilk)

Method

Beat eggs, add them to the flour and beat in the milk. Mix well until there are no lumps. If you have time to leave the batter settle for an hour or so before using even better! Turn heat to a medium setting and using a non stick pan add a tiny knob of butter. When it has melted pour the batter (from a jug is best) into the centre of the pan. Move the pan in a circular motion so the batter covers the base of the pan. Leave it to cook for about 1 1/2 minutes until you see bubbles in the batter. Then flip the pancake with the help of a spatula. Leave pancake cook on other side for the same amount of time. You can leave pancakes in a very low heat oven covered with a teatowel as you are preparing them. Enjoy them with whatever toppings you like or maybe try a savoury pancake for your evening meal!
