Paleo Egg Omelettes


I have a busy morning tomorrow and I'm not sure when a lunch break will happen, so I have just prepared these simple and delicious mini egg omelettes to keep blood sugar stable, energy high and hunger at bay! Paleo Egg Omelettes

You will need a 12 case muffin tray. Grease it well with coconut oil. Then beat 6 eggs with a little almond milk and season well with freshly ground pepper. In each muffin case add whatever filling you would like (chicken, spinach, scallions, red peppers - my favourite), then pour the egg mixture on top until it nearly reaches the top. Bake at 180 degrees Celsius for about 10-15 minutes. Let cool a little before removing from the tray. Enjoy hot or cold.
