Omelette Wraps .. simple, healthy and keeps busy people fuller longer
So you are looking for a quick, easy and healthy meal...maybe your eating late, post training, grabbing lunch on the go or feeding hungry children after school. These omelette wraps make a super healthy easy meal and can filled with anything you like. My daughter found this filling in one of Rachel Allen 's cookbooks .. delicious. Full of great fats and protein and perfect for keeping busy people fuller longer!
Omelette Wraps with avocado salsa filling
2 eggs beaten 1 tablespoon milk 1 teaspoon of butter 1 tablespoon of creme fraîche 1 medium tomato washed, dried and chopped into small pieces 1 spring onion 1/4 avocado chopped freshly ground salt and pepper fresh coriander and basil chopped A squeeze of lime juice
Beat the eggs and milk and season with salt and pepper. Put butter in a heated frying pan and when melted add egg and ensure it has covered the based of the pan. Leave for 1 1/2 to 2 minutes until golden and turn and cook other side for another 1- 1/2 minutes. Slide omlette onto a plate and spread creme fraîche on top. Add all ingredients and wrap. Enjoy.
