Oat and Almond Pancakes (gluten free)

I can't get over how unhealthy the ingredients are on most gluten free bread products on the supermarket shelves. On top of that, most of them taste terrible! My advice to anyone who is coeliac or intolerant to gluten is to make your own breads and keep it simple. Here is a really easy breakfast (or sports recovery meal) that is gluten free and made with nuts and oats for long lasting energy. Oat and Almond Pancakes.

Ingredients

  • Dry ingredients are composed of:
  • 1/3 gluten free self raising flour
  • 1/3 ground almonds
  • 1/3 gluten free oats (Blitz in a food processor)
  • 1-2 eggs
  • Cinnamon (1-2 teaspoons depends on how you like them)
  • Enough milk (almond milk good here) to mix to a thick sloppy batter
  • *Can add 1 mashed banana to this mixture for a real filling breakfast

Method

Heat a dry non-stick pan turn heat down to medium, (may need a very small knob of butter for your first pancake) and pour a ladle of mixture onto pan. Make sure pan isn’t too hot or the mixture will burn before it cooks through. Turn pancake when bubbles are seen on the surface. Serve with fresh fruit and natural live yogurt. (Lemon and a little sugar is great too!)
