Oat, Almond and Banana Pancakes

Ok here's a recipe you'll all enjoy (children and adults) and believe it or not, it is a great healthy breakfast idea.. pancakes.. but pancakes made from nutritious ingredients (bananas, oats, almonds, eggs and milk), slow energy releasing carbohydrates (oats) with great protein and fats (almonds, eggs, milk) to keep you fuller longer. There are perfect for the weekend or as an after school snack for children who are low after an active day. Both my children love them. We pair them with some sliced fruit and it makes are really delicious breakfast. Here's how I make them:

  • 100g ground almonds
  • 100g oats 100g white flour (can substitute this for more oats for a refined flour free pancake mix)
  • 1 egg
  • 1 banana
  • 1-2 teaspoons of cinnamon (according to taste)
  • Enough milk (dairy or non dairy - almond, coconut, rice etc) to bring batter to a thick, sloppy consistency

Mix dry ingredients. Add beaten egg, mashed banana and enough milk to bring to a thick, sloppy consitency. Heat a pan on a medium heat and add a little coconut oil/butter. pour a small ladle of batter onto the pan. wait until you see bubbles in the batter and the edges slightly cooked and then flip to the other side. Enjoy!
