Chicken Burrito Bowl - Definitely worth a try!


This is an easy and delicious family meal and one that I have had great feedback from clients who have tried it. Serves 6

  • 4 free range chicken breasts chopped into bite size pieces
  • olive oil
  • 1 large yellow onion chopped finely
  • 1 garlic cloves crushed and chopped finely
  • 1 cup of long grain rice
  • 1 tin tomatoes
  • 1 tin black beans
  • 1/2 teasp of chili powder
  • 1 teasp cumin
  • 600-700mls chicken stock
  • (can add some jalapenos along with the onions for a hotter dish)

Topping ideas:

  • chopped scallions
  • chopped tomatoes
  • chopped peppers
  • grated cheese
  • guacamole
  • sour cream

In a large pan sauté onion in olive oil or butter, when they start to soften push to the side of the pan and add chicken pieces and garlic. When chicken has started to brown push to the side of the pan and add a tablespoon of olive oil and rice and cook rice for about 2 minutes until some grains start to brown. Stir in black beans, tomatoes, stock, chili powder and cumin. Bring to a simmer and cook for about 20 minutes until rice is cooked and most of the liquid has reduced down. Leave to sit in the pot for a few hours to let flavours develop. Reheat when ready to eat. Serve in a bowl and top with your choice of toppings.
