Chewy (Nut-Free) Granola Bars ... Croke Park Winners!

I am very proud of my daughter and all her 6th class team mates who played a fantastic game of football in Croke Park today. I'd love to say their outstanding energy on the pitch was helped by their pre match fuelling ... my chewy granola bars, but I definitely can't take that credit. Brilliant game to watch .. well done girls! I understand everyone of the team tried and enjoyed my energy bars and I promised to share the recipe ... so here it is. (Warning: I did make this recipe up as i went so apologies if my measurements are a little out).

 

Alva's Chewy (Nut- Free) Granola Bars

Ingredients

200 grams oats 100 grams *wholemeal flour 100 grams *self raising flour 1 teaspoon baking powder 2 teaspoons cinnamon 1 teaspoon vanilla extract 150 grams honey 2 tablespoons of butter (or coconut oil for dairy free) 100 grams of mixed seeds (I used sunflower and pumpkin) 3 large bananas mashed

*For Gluten Free Recipe - Swap flours for 200g of Doves Farm gluten free self raising flour and choose gluten free oats

Method

Mix all ingredients and press into a baking tray (1 inch thick) lined with baking paper. Bake at 190 degrees celcius for 20 minutes until edges are golden brown. After about 10 minutes of cooling, cut into small bars - don't remove from the tray until fully cooled. Makes 25.
