Carrot, Ginger and Cashew Nut Soup
Here is a wonderful bowl of nourishment and joy... a warm and filling winter soup perfect for the cold months ahead. Ingredients
1 large onion chopped 1 knob of butter 1 large hunk of ginger peeled and chopped 7-8 medium sized carrots washed and peeled 1/2 sweet potato peeled and chopped into chunks 1 large handful of cashew nuts Enough chicken stock to cover vegetables Freshly ground pepper to taste
saute the onion in butter for 5 minutes on a low heat. Add carrots, sweet potato and ginger and cook for a further 3 minutes. Add stock and cashew nuts and leave to simmer for 20-25 minutes until vegetables are cooked. Blend and season well with pepper. Add a little extra water if the soup is too thick.
