Berry Loaded, Low Sugar Buns


Most of us like a treat every so often and even with it being January it shouldn't mean they are off limits. Well here is a treat with a healthy twist. It is the traditional bun with only 35% of the sugar (only 1 teaspoon of added sugar per bun) content, a boost of protein and loaded with vitamins, mineral and antioxidants. So its a treat, but a way healthier one that the bar of chocolate or biscuits you might grab from the kitchen press! They are so easy to make, so there's no excuse not to prepare a batch of 16 on Sunday and throw them in the freezer for when you need them!  

Berry Loaded, Low Sugar Buns

  • 230g mixed frozen berries
  • 200g self raising flour
  • 2 eggs
  • 200g live natural yogurt
  • 190g butter (at room temp)
  • 3 drops of vanilla extract 70g sugar

Here's the super quick 5 minute preparation method

Weigh all ingredients except for berries and place in a big bowl. Beat well with an electric beater until mixture is combined. Add berries and mix with a spoon until well distributed throughout mixture. Line two muffin trays with 16 muffin cases and place a tablespoon of the mixture into each of the cases. Bake at 190 degrees Celsius for approx. 15-20 minutes until brown and firm to touch.  Great warm from the oven and cold for the lunchbox!
