Beef and Black Bean Chilli
There is nothing better than a bowl of hot chilli on a wet, cold winter day (actually I could eat it any day!). Here is a simple beef and black bean chilli recipe for any of you who also share my love for this simple, comfort meal.
Ingredients
- 1 knob of butter
- 1 large onion chopped finely
- 1 fresh chilli chopped
- 3 cloves of garlic, crushed
- 500 grams minced beef
- 1 tin of tomatoes
- 150 mls passata
- 50mls water
- 1 tin of black beans, minced well
- 1-2 tablespoons of chilli in olive oil or harissa paste
- freshly ground pepper
- Fresh coriander
- Lime wedges
Method
Sauté the onion for 5 minutes on a low to medium heat in a large pan. Add meat and garlic and mix well until browned. Add chilli, tomatoes, passata, water, black beans and chilli in olive oil and mix well. Leave to simmer on a medium heat for 40 minutes (stirring every so often). Season with freshly ground pepper. Serve in a bowl and garnish with fresh coriander and lime wedges. I love to top with a big handful of rocket - no extra carbs needed!
