A Week Going Paleo..

I know many of you have tried or are committed to a paleo diet (lots of lean protein, fruits and vegetables and healthy fats from nuts, seeds, avocados, olive oil, fish oil and grass fed meat.  No grains, dairy or refined sugars). I am all for eating real, whole unprocessed foods, and try as much as I can to ensure my family’s diet consists of home cooked, nutritious foods and I cook a lot of delicious paleo meals (however I think I would struggle going 100% paleo, as I would miss toasted Biona Rye bread with nut butter in the morning, and some real butter in my soups from time to time). This week I am going to post some of my favourite paleo recipes for you to try. As always my recipes are very simple and quick so anyone can give these delicious meals a go!  

Almond Coated Cod, Sweet Potato Chips and Broccoli with Toasted Walnuts

Sweet Potato Chips

1 sweet potato, peeled

Freshly ground salt and pepper

(Cumin or cayenne pepper or smoked paprika or curry powder. Fresh rosemary is lovely too!)

Olive oil

Preheat the oven to 190 degrees Celsius. Peel and cut sweet potato into wedges. In a bowl drizzle potatoes with olive oil and season well with salt and pepper. Sprinkle with spice(s)/herbs of your choice. Using your hands mix the spices, olive oil and potato wedges well. Scatter wedges onto baking paper and bake for 20-25 minutes, tossing half way.

Almond Coated Cod Fillets

400 grams of fresh cod (skin and bones removed), try get a thick piece

100 grams ground Almonds

1 egg beaten

Freshly ground salt and pepper

Olive oil

Serves 2 adults

Preheat the oven to 190 degrees Celsius. Cut cod into two 200 gram fillets. Place beaten egg into a large bowl and ground almonds into a second large bowl. Dip the fish fillets into the beaten egg, making sure they are well coated, then dip the fillets into the ground almonds again making sure the fish is well coated. Season well and place on a oven tray lined with baking paper. Drizzle with olive oil and bake in the oven for 15-20 minutes.

Broccoli with spiced walnuts
