A Simple Nutrient Dense, Low Calorie Meal (made with ingredients from an empty fridge!)

 How to make a nutritious feast in five minutes "out of nothing"

Ever find yourself in the door from work, hungry and then look in the fridge to see nothing for dinner? It is all to easy to make a poor food choice when this happens and find yourself eating a highly processed, nutritionally poor meal (that you feel terrible after!)

Well here's a five minute nutritious feast to create on those "nothing in the fridge" nights

A Power Omelette

  • 4 eggs
  • knob of butter
  • Any vegetables you can find (I found onion, tomato, broccoli, cold cooked sweet potato)
  • ½-1 teaspoon of smoked paprika (if you have some)
  • Any cooked meat/fish you can find (I threw in 1 rasher in this omelette)

Serves 2

In a frying pan/omelette pan, saute the vegetables in a little butter for 5 minutes on a low to medium heat. Throw in your cooked cold meat/fish. Beat the eggs, add a drop of milk if you like and season with salt and pepper. Add the beaten eggs to the vegetables. Leave cook on a low heat until the omelette has nearly set the whole way through. Then carefully turn the omelette and let it cook for a further 30 seconds to a minute. Serve immediately.
