A healthy salad dressing with no guilt!


Sometimes, a simple thing like a tasty home made dressing can make salad eating much more enjoyable. Dressings don't take long to make and most will last for a week or so in the fridge. People often ask me if "it's okay" to put some dressing on your salad and my answer is "of course" if its a homemade, healthy dressing full of great fats and protein just like this one! I bought a bag of organic kale on Thursday last and made a great plant based meal topped with this great dressing. Salad: Kale, quinoa, chickpeas, lightly salted almonds.

Healthy Caesar Dressing


190g plain Greek yogurt

40g freshly grated Parmesan cheese

3 tablespoons extra-virgin olive oil

3 tablespoons freshly squeezed lemon juice

1 teaspoon fish sauce

1 1/2 teaspoons Dijon mustard

1 large garlic clove


Place all ingredients (Greek yogurt, Parmesan, olive oil, lemon juice, anchovy, mustard, and garlic) in a blender or food processor. Puree until smooth

Store in an airtight jar or container in the refrigerator for up to 1 week. Shake before serving.
