What to do with all of those autumn Plums!


Plum and Almond Cake


Quantity 2 loaf cakes

400g self raising flour
60g ground almonds
300g butter
6 large eggs lightly beaten
270g sugar
tsp vanilla extract
50mls of buttermilk (may need a little more to bring mixture to a cake batter consistency)

30-40 plums washed and sliced
pinch of cinnamon


Preheat oven at 180 degrees Celsius. On a gentle heat cook the plums in a pot with a pinch of cinnamon for about 5-10 minutes. In a large bowl mix the butter and sugar well. Gradually add eggs, vanilla extract, milk and dry ingredients, mixing as you go. Grease two loaf tins with butter and place cooked plums on the base of each tin. Spoon cake batter onto the plums and bake for approx 40-45 minutes. You may need to lower heat to about 160 for the last 10-15 minutes. Every oven is different and the size of you loaf tin may be different so test that the centre of the cake is firm to touch before you take it out of the oven.
