Vegan Chocolate Pudding Recipe
Vegan Chocolate Pudding recipe from last Saturday's Irish Times Magazine. Simple ingredients and I think this recipe could be one to try!
(which personally I can't say for all vegan dessert recipes...as I do like a little butter in my cakes!)
100g dark chocolate (min 65% cocoa)
1 large ripe banana
2 tbsp maple syrup
1 tsp vanilla extract
100g dairy free spread (plus extra for greasing)
100g caster sugar
120g self raising flour
3 tbsp cocoa powder
75ml oat milk (plus extra if needed)
Grease a shallow ovenproof dish. Preheat over to 180 degrees Celsius. Melt chocolate and set aside. Blitz banana and maple syrup and stir this into chocolate. Add vanilla essence. Cream dairy free spread and sugar and mix into the chocolate mixture. Sieve flour, cocoa power and salt and in two batches mix dry into wet ingredients. Add in enough oat milk to give a smooth, thick but slightly loose batter. Pour battering to dish and bake for 20-25 minutes until outer surface looks set and mixture is slightly softer in the centre. Serve from the oven.
