Peanut Butter Oat Bars

Filling, Healthy and Satisfying!

I have a weakness for a great homemade oat bar. I don't like them sweet but prefer a satisfying bar with plenty of chew. We all know the traditional flap jack is loaded with sugar and butter and for those of you looking for a healthy snack bar, here is a great recipe I tried yesterday and it worked out very well.... (so much so I had to freeze them as the hand was returning to the container of bars a little too often yesterday evening!). 

The bars are moist and filling as they are packed with eggs, banana and nut butter. I also added a little coconut I only had a little bit at the end of a bag) but will add more next time as I love coconut in an oat bar. 



4 ripe bananas
160grams of all natural peanut butter
4 tablespoons of milk
1.5 teaspoons of vanilla extract
3 tablespoons of honey (optional)
2 free range eggs
450grams of oats
85grams of wholewheat flour
50grams of desiccated coconut



Preheat oven to 175 degrees Celsius. Mash the banana with a fork. Mix in peanut butter, milk, vanilla, honey and eggs. Add the remaining ingredients and mix well. 

Drop a very good heaped tablespoon of dough onto a baking tray lined with parchment paper. Bake for 12-15 minutes or until pale golden brown.
