Wholemeal Orange and Cinnamon Drop Scones
Ingredients
200g wholemeal flour
300g self raising flour (or 100g oats and 200g self raising flour)
1 teaspoon of baking powder
2 heaped teaspoons of cinnamon
Zest of one large of two small oranges
100g butter
60g brown sugar
2 eggs beaten
enough buttermilk to make a think sloppy dough (one you can spoon onto a tray)
Method
Preheat oven to 200 degrees Celsius. Prepare a large baking tray with greaseproof paper. Mix dry ingredients. Rub it butter until it resembles breadcrumbs. Add eggs, zest and buttermilk. Mix to a thick sloppy wet dough. Spoon out heaped tablespoons of dough on the prepared tray. Bake at 200 for 12-15 minutes (Until they go slightly brown).
I added some sultanas into half my batch today as my son loves them. Could also add some slivered almonds.
