Immunity boosting soup to heal and nourish

We're bang in the middle of the season for flu, colds, viruses, sore throats and general low immune function and and the perfect time to have a pot of warm nutrient rich soup on the stove everyday.

Turmeric's anti-inflammatory and antioxidant properties help stimulate the immune system. Ginger also has numerous health benefits: Heals the gut and relieves nausea, and can help prevent ulcers that sometimes lead to stomach cancer, helps to strengthen the immune system, helps to ease pain and promote healthy inflammation levels, especially involving joint pain and helps to lower cholesterol levels. Add to this the high concentrations of beta-carotene (converted in the body to vitamin A, a powerful antioxidant that plays a critical role in maintaining healthy vision, skin and neurological function) the carrots and you have a great healthy soup to nourish, heal and boost energy. 


INGREDIENTS

  • 3 large carrots
  • 1 onion
  • 2-3 cloves garlic minced
  • 1 inch Piece of Fresh Ginger finely grated
  • 2 inch Piece of fresh Turmeric finely grated
  • 850ml Vegetable Stock
  • 1 tbsp Lemon Juice

METHOD

Chop the onion and carrot into small chunks and grate the ginger and turmeric.

Heat a small amount of butter or olive oil in a big pot and saute the onion for 3-5 minute on a medium heat, then add the minced garlic, turmeric and ginger and saute for another 2 minutes. Then add the diced carrot and saute for another couple of minutes.

Finally add the vegetable stock and simmer for 25 minutes until the carrot is cooked through. Blend the soup until it is smooth. Add the lemon juice and stir and serve. Top with a little coconut milk and parsley if desired.
