Coconut Oat Drop Scones

A homemade scone is a quick and easy healthy addition to the lunch box for busy children and adults on the go. I've lots of different scone recipes on my website and this one will appeal to all of those who enjoy coconut. 


150g desiccated coconut
250g self raising flour
100g oats
70g sugar (optional)
1 1/2 teaspoons baking powder
100g butter
2 free range eggs (beaten)
enough buttermilk to bring to a sloppy dough



Mix all dry ingredients. Rub in butter well. Add eggs and mix well. Add enough buttermilk (approx 150mls) to bring to a sloppy dough. Bake at 190 degrees celsius for 12-15 minutes until risen and golden brown.
