Thanks to all the parents and grandparents at St.Eithne's GNS Edenmore who took part in my nutrition and fitness workshop this morning! 

As part of the school's active week, I took them through their paces with a strength and conditioning workout (followed by some healthy "post workout" snacks!). 


As promised, here are the recipes for the two healthy snacks and the 2-minute full body workout. The workout is a body weight workout so needs no equipment and can be done anywhere. Try building up to five rounds for a great full body 10-minute workout. 


2-Minute Bodyweight Workout

 

 


Raspberry and Oat Scones

Ingredients

300 g self raising flour

100 g oats

100 g wholegrain flour

2 teaspoons of baking powder

100 g butter

2 eggs (beaten)

200 mls buttermilk (or regular milk)

150 g frozen raspberries

50 g sugar (optional)

Method

Preheat oven to 190 degrees Celsius. Mix the dry ingredients. Rub in the butter until it resembles breadcrumbs. Add beaten eggs and milk and mix well. Stir in raspberries. Spoon onto a baking tray covered in baking paper. Makes approximately 16 scones.  Freeze very well!
