Coconut (Gluten Free) Pancakes
You don't have to miss out going gluten free with these delicious coconut pancakes!
2 tablespoons of coconut oil plus a little extra for cooking
3 free range eggs
100ml coconut milk
40g coconut flour
1 teaspoon vanilla extract
Pinch of bicarbonate of soda (check for suitable brand)
1 tablespoon of honey (optional)
Mix the eggs, coconut oil and honey (optional) together well. Add the coconut milk and vanilla extract. Add in the dry ingredients and mix well. Add some coconut oil to a heated pan. Ladle a portion of batter onto the pan. After 1-2 minutes, check the underside of your pancake to see if it has browned. Once cooked flip the pancakes and cook the other side for 1-2 minutes. Serve immediately on their own or with a delicious topping!
