Chicken Noodle Soup

The perfect meal for this time of year.
It is warm and nutritious and ready in no time!

Chicken Noodle Soup


1 cooked free range chicken with meat removed
200 g rice noodles (or fine egg noodles)
1.3 L of chicken stock
3 cloves of garlic crushed
1 large hunk of ginger peeled and finely chopped
3-4 tablespoons of fish sauce
Juice of one lime or lemon
8 spring onions trimmed and chopped
1 large handful of fresh coriander chopped

Add chicken meat, stock, ginger and garlic to a large pot on a medium heat for 5 minutes. Add noodles, fish sauce and spring onions and leave simmer on a low heat for 10 minutes. Add spring  coriander and it is ready to serve in to bowls. It can be left on the stove for a few hours and reheated later in the day. 

Adding some baby spinach before it is served boosts your greens and its nutritional value!
