Simple, No Carb Salmon Cakes!
Here's a tasty salmon cake recipe I orignianlly saw Jamie Oliver create where you don't miss the potato! Just four healthy ingredients for a flavoursome evening meal. For a really healthy. light evening meal, serve on a big bed of green salad.
500 grams of salmon fillets, remove skin and bones
Bunch of coriander, chopped
Hunk of ginger (about 5cms)
A stick of lemongrass
Start by peeling the ginger and lemongrass (remove tough out layer) and very finely chopping both with the coriander. Chop the salmon into very small chunks and add to your chopped mixture. Chop the whole mixture further until you are happy with the consistency. Season with freshly ground salt and black pepper. Divide into 4 portions and shape and into 2cm-thick cakes. Heat a large non-stick frying pan on a medium-high heat with a little coconut or olive oil. Cook the salmon cakes for 2-3 minutes on each side, or until golden.
