Fig, Parma Ham, Blue cheese & rocket salad with a great balsamic dressing

Now here is a delicious, very simple to prepare and very impressive looking starter for a dinner party. Fig, parma ham, blue cheese and rocket salad. I had eight friends over for dinner last night and this went down very well. I picked up some delicious figs, organic rocket, blue cheese and a fig and apple jam from Avoca in Monkstown... Yes the fig and apple jam was my secret ingredient which I added to some balsamic vinegar to make a fantastic (sweet & sour) dressing to drizzle over the salad. It is as easy as placing rocket, ham, crumbed blue cheese and figs on a plate and drizzling the plate with the dressing.

For the dressing, I added two teaspoons of fig and apple jam to approx. 150ml of good quality balsamic vinegar and mixed well.
